Peanut Butter Cookies

easy three ingredient peanut butter cookiesStuck at home with all three kids, and my sister and brother in law are coming over for dinner. I want to be able to offer them something sweet after dinner (roast chicken, green beans, my everyday basics). I remembered MeaningFul Nest had emailed this recipe to me.

Easiest ever Peanut Butter Cookies...ready?
1 cup Peanut Butter
1 cup sugar
1 egg
Mix together, spoon onto cookie sheet, do the little criss-cross-fork thing.....350 degrees, 8-10 minutes.....yummo!!!

You do't even need a "recipe" but I'm giving you a picture tutorial.

silpat baking mat for non-stick cookies

Use a Silpat Non-Stick Baking Mat these things are amazing, nothing sticks to them and you can just rinse it off, no need to wrangle your cookie sheet into the dishwasher.

My daughter demonstrating that to get evenly sized cookies we use a small ice cream scoop.

The criss-cross fork thing-y. I'm all about technical baking terms:)

3 ingredients! No flour! Stuff you always have on hand! Try it!

Hey that's my recipe, too! Sometimes we throw in some vanilla, but not always. Looks like you've been cooking up a storm!

You can't fool me I know the STAY athomeista isn't at home! Hard to bake cookies with sand between your toes and Don Ho signing in the background.

My husband and son have weird food intolerances, so we love this recipe! We always add 1 tsp baking soda because I thought we had to, and everytime we make it we cut out a little more sugar and its still delicious!

Thanks for passing along the easiest recipe ever! I am so glad that you like them! They really are that easy. I have added chocolate chips or put Hershey Kisses or little peanut butter cups on top. You can't go wrong with chocolate and peanut butter.

That is just amazing! So seriously simple. I can't believe there is no flour involved. Kinda hurts my head figuring out why ...

My cousin *just* told me this recipe the other day. She loves it because her son has autism and is on a Gluten-free/milk-free diet. These are a great option for him. I need to pin them (you know, for the greater good and all...) Thanks for sharing! :)

I'm going to play around with this recipe to see if I can develop a version that doesn't use sugar - maybe honey or something.
